2011 Jeunes Chef & Jeunes Sommeliers Competitions - Winners!

The Grand Final of this year’s Chaîne des Rôtisseurs Young Chef Competition was described as ‘outstanding in creativity, flair and presentation'.
Wynand Van Rooyen, chef de partie for Planet Restaurant at the Mount Nelson Hotel, took on 5 other regional finalists at the Nestle Kitchens in Johannesburg on 2nd June, to win the coveted title of Chaîne des Rôtisseurs Young Chef of the Year 2011. Wynand's winning menu was: Entrée: Sea bass with ratatouille and a grappa sauce Main Course:
Roast lamb with potato fondant, Dessert: Chocolate soufflé with pomegranate parfait.
The six competing chefs were tasked with creating a three course meal from a mystery basket of items that included: lamb leg, lamb brains, red roman, anchovies, halloumi cheese, spinach, pumpkin, eggplant, dates, pomegranate and grappa. 2nd place was taken by Wynand Reiman from Singita Lebombo and Wamukelwe Zuma from Radisson Blu Sandton was 3rd. Wynand van Rooyen will represent South Africa at the international final in Istanbul, Turkey on 9 September 2011. He is hoping to follow last year’s South African national winner, Stacey Lee Chan, who went on to win the international competition in Sweden last year, proving that South African chefs can compete against the best in the world.
The finalists were required to taste wine and identify spirits on nose only.
Following the day’s judging, the winning line up was announced at a Gala Dinner and Awards Ceremony held at the Westcliff Hotel. The glittering occasion also incorporated the 30th Anniversary of the Chaîne des Rôtisseurs in South Africa, with some of the original members present.

In turn, the Jeunes Sommeliers finals took place at Pallazzo (Monte Casino) with Gareth Ferreira (The Saxon, Johannesburg) being declared the winner, and Leon Coetzee (Stonehill, Outeniqua) as the runner-up.
